The lemon balm (melissa officinalis) is also called lemon balm because of its lemon-like aroma that exudes when the leaves are crushed. It is a perennial herb with opposite leaves, in the armpits of whitish flowers. When harvesting lemon balm, you should make sure that this happens before flowering, because then the content of essential oil is highest.
